Da Nang eats like the crossroads it is: Quảng Nam noodle bowls, Huế salt coffee and fish landed that morning. Three days of alley bánh xèo, wet-market breakfasts, fermented anchovy dips and craft beer beside the Han River.
Da Nang's biggest wet market, open 06:00–19:00. The upstairs food court runs 30-plus stalls: bún mắm nêm, bánh canh, ốc hút and chè. Ground floor sells fresh turmeric, mắm nêm anchovy sauce and dried squid by the kilo.
A tin-roofed institution down alley K280/23 Hoàng Diệu, running since the 1980s. One order: rice-flour bánh xèo with pork and shrimp plus grilled nem lụi skewers, wrapped in rice paper with the family peanut-liver sauce.
The 1940s riverside market at 119 Trần Phú, open 06:00–19:00. The second floor is dried goods: mực rim me tamarind squid, bánh khô mè sesame cakes, Quảng Nam cinnamon and green tea. Ground-floor stalls plate bún thịt nướng.
Chả cá — steamed and fried mackerel cake — in a clear broth of pumpkin, cabbage and bamboo shoot, the bowl Da Nang eats from dawn to midnight. This shop runs 06:00–22:00 and serves it with mắm ruốc shrimp paste on the side.
Central Vietnam's signature noodle: wide turmeric rice noodles under just a splash of broth with pork, shrimp, quail egg, peanuts and a shard of sesame rice cracker. Bà Mua occupies three Trần Bình Trọng shopfronts, 06:00–21:00.
Two-ended boiled pork belly rolled in rice paper with a dozen herbs, green banana and starfruit, then dunked in fermented anchovy mắm nêm. The Lê Duẩn branch is the original of the chain, open 08:00–22:00.
Afternoon-only steamed rice cakes served in small clay saucers under dried shrimp floss and crackling, plus bánh nậm and bánh lọc folded in banana leaf. Trays go out around 14:00 and the shop closes when they're gone.
The beachfront seafood canteen locals actually use: choose live from the tanks — ốc hương sea snails, cua rang me tamarind crab, mực nướng grilled squid — priced by the kilo and cooked to order until 23:00.
A crackling-crisp baguette with pâté, chả lụa, house pork floss and a scoop of the family chilli sauce, sold from 06:00 to 20:00 to a permanent scooter queue. Chase it with cà phê muối, the salted coffee out of Huế.
A 17km ride north to the village that invented gỏi cá: raw anchovy cured in lime and garlic, tossed with roasted rice powder and rolled with wild herbs gathered off the Hải Vân slopes. Village eateries serve 10:00–20:00.
Vietnam's specialty-coffee flagship at 422 Ngô Thì Sĩ, roasting single-origin Đắk Lắk and Cầu Đất beans on site. Take a filter flight or the cascara alongside a traditional cà phê sữa đá for contrast. Open 07:00–22:00.
Da Nang's first craft brewery pours around 20 taps built on Vietnamese ingredients — passionfruit sour, Da Nang pale ale, robusta coffee stout — with mồi nhậu drinking snacks, from 15:00 across the river from the Dragon Bridge.
