Pattaya eats on two clocks: the fishing-village one that starts at dawn in Naklua, and the neon one that runs past midnight. Between them sit Isaan grill sois, a 24-hour Chinese-Thai kitchen and cliff terraces over the Gulf.
Pattaya's working fish market behind Lan Po Park lands squid, blue crab and mackerel from 06:00. Buy by the kilo and the stalls opposite will grill or steam it for you. Peak trading is 07:00–10:00; near-empty by noon.
A converted fishing pier at the far north end of Naklua where the house dish is som tam poo ma, papaya salad pounded with raw blue crab. Tables sit over the water on the old breakwater, with fried sea bass in fish sauce alongside.
The sois around Buakhao are where Pattaya's Isaan migrant workers eat: som tam pounded to order, kai yang grilled over coconut husk, laab moo and sticky rice in bamboo baskets. Most plates land at 40–70 THB.
Runs Friday to Sunday, roughly 17:00–23:00, across about 1,000 stalls. The food aisles cluster at the Sukhumvit end: charcoal squid, hoi tod oyster omelette, kanom krok coconut puddings and cha yen poured over crushed ice.

A 24-hour Chinese-Thai room on Central Pattaya Road trading since the 1970s. Order khao kha moo, stewed pork leg over rice with pickled greens, or the braised goose. Kuay jab, peppery rolled rice noodle, is the local 4am cure.
A 100,000 sqm teak market on Sukhumvit split into Thailand's four regions, and the food is the reason to come: charcoal river prawns, khanom bueang crisp pancakes, and boat noodles handed up from vendors in the canal.
A restaurant carved into the cliff north of Naklua, terraces stepping down toward the Gulf. The kitchen is serious central Thai — gaeng som fish curry, pomelo salad with dried shrimp — and no reservations are taken for the lower decks.
Monks leave Wat Chaimongkol around 06:30 to collect alms, and by 09:30 the surrounding lanes are trading jok rice porridge with century egg, patongko dough sticks dipped in pandan custard, and bags of pressed soy milk.
A working fishing village 20 km south where the stilt-house restaurants along the pier buy straight off the boats. Steamed sea bass with lime and garlic, grilled tiger prawns and crab in yellow curry run near half Pattaya Beach prices.
Thailand's tropical-latitude vineyard sits below Buddha Mountain and grows Shiraz, Chenin Blanc and Pokdum. Tastings pour at the cellar door and the restaurant grills lamb to match the estate red. Harvest runs in February.
A beachfront Thai and seafood dining room on the quiet Na Jomtien stretch, with tables set directly on the sand under casuarina trees. Tom yum talay and whole grilled red snapper carry the menu; sunset falls around 18:30.
